About Falk Thermal
Falk Thermal was born out of 29 years of hands-on experience in bakeries. The journey began at East Balt Europe, now part of Bimbo QSR, with a focus on oven performance, process optimization, and technical project delivery. In 2010, Stéphane Fjelddahl managed the greenfield build of what is now Bimbo QSR Aix-en-Provence, and supported the launch of every new facility across Europe.
Thermal profiling emerged as a side project while investigating airflow in a bun oven — using nothing more than a standard GoPro to reveal areas of excessive convection. That simple field fix led to a new way of understanding heat flow and product consistency.
Today, Falk Thermal is the world’s first complete thermal profiling solution offered fully as a service. Built around a patented invention and refined in real bakeries, the system combines accurate data capture, expert analysis, and AI-powered insights — with no setup or training required from the client.
